Serves Method Place the sausage meat in a bowl. Stir in the onions with 60ml (4tbsp) parsley. Season well. With floured hands, shape the sausage-meat into thirty-two balls. Place on a baking sheet, cover and chill. Heat a thin film of oil in a large roasting tin. Add the forcemeat balls. Bake at 180°C (350°F), gas mark 4 for about 45 minutes, turning occasionally. Drain on absorbent kitchen paper. Toss in parsley and serve as an accompaniment to turkey. |
