Forcemeat Balls
50g (2oz) butter
175g (6oz) onions, skinned and roughly chopped
50g (2oz) walnut pieces, roughly chopped
2.5 ml (½ tsp) chilli powder
900g (2lb) Traditional Old English Pork sausage meat
Chopped fresh parsley
Salt and pepper
Flour
Oil

Method
Heat the butter in a frying pan, add the onions and fry until beginning to brown. Mix in the nuts and chilli powder, stir-fry for 1 minute. Turn out on to a plate. Leave to cool.

Place the sausage meat in a bowl. Stir in the onions with 60ml (4tbsp) parsley. Season well.

With floured hands, shape the sausage-meat into thirty-two balls. Place on a baking sheet, cover and chill.

Heat a thin film of oil in a large roasting tin. Add the forcemeat balls. Bake at 180°C (350°F), gas mark 4 for about 45 minutes, turning occasionally. Drain on absorbent kitchen paper. Toss in parsley and serve as an accompaniment to turkey.
