Sausage & Barbecue Bean Pot
450g (1Ib) Traditional Old English Pork sausages
1 tbsp olive oil
1 large onion, thinly sliced
1 garlic clove, crushed
2 red peppers, deseeded and finely diced
1 small red chilli, deseeded and finely chopped
800g (28oz) barbecue beans
Parsley or coriander, chopped
Salt and freshly ground black pepper
Crusty bread and potato wedges to serve

4-6 people

Method
Heat the olive oil in a large frying pan or casserole dish. Cut the sausages into bite-sized pieces and fry until evenly browned. Remove the sausages and fry the onions, garlic and peppers in the remaining oil.

Add the chilli and return the sausage pieces to the pan, followed by the barbecue beans. Season to taste. Cover and cook for 10 minutes.

Stir in the fresh parsley or coriander and serve with crusty bread and potato wedges.
