Sausage & Tomato Tagliatelle

Serves: 4

Cooking time: 35 minutes


1tbsp Oil
1lb (450g) Pork, Tomato & Black Pepper Sausages
1 Onion, Chopped
400g Chopped Tomatoes
2 tbsp Tomato Puree
2 tbsp Dried Mixed Herbs
1 Large Courgette, cut into 5cm/2in sticks
250g Tagliatelle
Garlic Bread, to serve.

  • Heat the oil in a pan and add the chopped onion.  Remove & discard the skins from the sausages and add them to the onion.  Cook for 15 minutes, until they start to brown, breaking the sausages up with a spatula into 1 inch pieces.
  • Stir in the chopped tomatoes, tomato puree and dried herbs, and season.  Bring to the boil, cover and simmer for 15 minutes.  Stirring occasionally.
  • Meanwhile, bring a pan of water to the boil.  Add the tagliatelle and cook for 10-12 minutes until tender.
  • Add the courgette to the sausage sauce for the last 5 minutes of the cooking time.

  • Drain the tagliatelle, then stir into the sausage sauce.  Serve hot, with a side of garlic bread and plenty of parmesan!!!
