Sausage Casserole


  • 8 Pork, Venison and Mushroom Sausages OR 8 Toulouse Sausages
  • 1 yellow pepper , deseeded and chopped
  • 4 red onion, cut into wedges
  • 400g can chopped tomatoes
  • 250ml vegetable stock
  • 1 tbsp basil (20g pack you'll use the rest on the toast)


Prep 5 mins

Cook 40 mins

Heat oven to 220C/fan 200C/gas 7. Put the sausages, pepper and onion into a roasting tin and roast for 20 mins. Lower oven to 200C/fan 180C/gas 6, then tip tomatoes and stock over the sausages. Add sugar and most of the basil, season, then stir well. Roast for another 20 mins. Serve sprinkled with remaining basil and garlic toast.

Garlic and basil toast

Cut a 400g bloomer loaf into 8 slices. Mix together 25g low-fat cream cheese, 1 tbsp butter, 2 crushed garlic cloves and about 1⁄2 pack of basil, roughly chopped. Lightly toast the bread on both sides, then cover one side with the mix and grill briefly until melted and golden.
